500g of raw Langoustine Tails
Other Ingredients
3 tablespoons chopped garlic
1 finely chopped onion
2 teaspoons cumin seeds
1 teaspoon shrimp paste
2 tablespoons Thai green curry paste
1 tin coconut milk
1 tablespoon fish sauce
2 teaspoons sugar fresh basil
4 kaffir lime leaves fresh coriander
Method:
1. Heat a little oil in a wok and add the onion and stir fry for a moment or two until it softens before adding the garlic and cumin seeds. Stir-fry them until the garlic and cumin is slightly toasted.
2. Add the curry paste and stir-fry for a couple of minutes.
3. Add the coconut milk, fish sauce, sugar, torn basil leaves, lime leaves and langoustines. Reduce the heat and simmer for a few minutes until the langoustines turn opaque.
4. Stir in some chopped coriander and serve with plain rice.
