This is a great “prepare ahead” type dish since you can do the “crumb mixture” in advance adding the oil just before topping the fish.
You will need:

4 thick boneless/skinless
fillets of white fish.
2 tablespoons olive oil
grated orange zest
small red chilli
1. Make your breadcrumbs in a food processor and add some chopped parsley, orange zest and chopped chilli and give this mix a final whirl. Set this aside and add some olive oil just before topping the fish!
2. Wash and dry the fish fillets before pressing in the flavoured crumbs.
3. Bake in a pre-heated oven 220°/Gas 7/second bottom shelf Aga roasting oven for around 10/12 minutes.
This is perfect served with new potatoes and some lovely lightly cooked fresh green vegetable.
